POTATO LATKES

Latkes, or potato pancakes, are traditional for Hanukkah, especially served with applesauce!

Ingredients:
  • 4 large potatoes (or about 3 lbs worth)
  • 2 eggs
  • 1 tsp salt
  • 3 tbsp all-purpose flour or matzah meal
  • 1/2 tsp baking powder
  • (optional) a little minced onion
  • (optional) a dash of fresh black pepper
  • vegetable oil for frying
  1. Wash and peel the potatoes.      
  2. Grate the potatoes with a grater or food processor
  3. Drain off liquid
  4. Beat the eggs and mix with the grated potatoes and other ingredients (except the oil!)
  5. Heat about 1/2 inch of oil in a skillet over medium high heat until very hot.
  6. Drop potato mixture by tablespoons into oil. Use a pancake turner to flatten them out.
  7. Fry to golden brown on both sides (should take 2 to 3 minutes per side) Don't try to fry more than three or four at a time.
  8. Drain on  paper towels.
  9. Serve with applesauce or sour cream.
